Dust the fillets skin on, in a freezer bag with a satchel of Taco seasoning. Lay them skin down on a non-stick tray greased with a little olive oil. Top with a dob of butter and black pepper then bake @ 180C for 5-10 min, be careful not over cook and dry them out.
Serve with your favourite fillings and enjoy!

Trumpy, that looks awesome.
Fish soups are mostly under rated but I love em. My fav is with Leatherjackets (believe it or not) but the KG one looks nice, might give it a go , , , , with crusty bread , , , , mmmm
On the words can not describe how good it is , , , , luckily because my good mate Arnie, hasn't got too many words in his vocabulary, but I'm sure he could give describing it a go
Now with the kind of muscles he's got, I hope no-one tells him that I made him look silly
Cheers, Bugzenegger

Yeah LX, it is awesome. Especially for those that don't like heavy fish flavours. The flesh is light and sweeter than most (bit like me ). Only thing is , , , , make the stock with the Leatherjackets first , , , , and then strain so there are no bones in. Peel the flesh and use in the making of the soup.
Being of Greek heritage, we do it in a Egg-Lemon style , , , , Arvyo-lemono , , , , and add rice to the soup, the rice cooks in the making of the soup then , , , , yum
Cheers, Bug , , , , I should stop talking about food, it's making me hungry
