I have given smoking fish,chicken,pork etc. a go. Is cherry and apple tree the best,is this a healthier way of cooking,regardless of costs.Why is apple and cherry considered good. I think i would rather build a smoker in the back yard rather than a pizza oven.

I use a variety, but most often apple, cherry, hickory, alder, mesquite.. depends if it’s fish, cheese, beef brisket, pork ribs or such I’m smoking.. salmon and gar were made for the smoker, and of course fresh trout is awesome

Small dried eels may be comfortable enough to puff. Not sure if it will burn though.rb85 wrote:What fish are best to smoke?
