I knock fillets off, (leave bones in - they disolve as they are cooked) roll the fillets up, and push a toothpick into them, then roll them in flour seasoned with salt, pepper, chilli, etc.
Then I cook up a sauce where I melt down some anchovy fillets and garlic/diced onion, until it is saute'd and broken down, add a can of diced tomatoes and reduce until its lost its acidity. add some herbs (basil, oregano, etc)
Once the sauce is done, I shallow fry the fish in a high smoke point oil, and then remove the tooth picks and put them in the sauce over a low simmer.
I then sear off some green veg (asparagus, broccolini, etc) in some oil, butter, salt, pepper and lemon juice and serve the rolled up fillets on a bed of the sauce with a side of crunchy seared veggies.
One of my favourites.

Beautiful eating fish. I scale, gut and cut the heads off.
Dip in flour, then egg, then flour again and deep fry for about 20 seconds each side.
You're left with a fish finger that peels easily off the back bone. If there are any rib bones left, they are hair thick.

Gars were the first fish I ever tried to catch when I was younger but never had any luck! About time I give it another crack I think!
