It's not a Flathead, it's a yellow belly.

When filleting the snapper I caught at mornington I cut into its gut cavity and it started leaking a Fluro green substance from its guts I don’t know what it is but the fish is still edible as I ate some and didn’t die wouldn’t mind knowing what it is though

That's it's gall bladder or something, the liquid spoils the meat somewhat so try and avoid bursting it.

I tend to gut my fish while I'm on the water then fillet them when I get home so there's less mess and no chances of stomach contents or whatever getting on the meat.

Thanks I didn’t know that hopefully I will catch enough snapper to master the technique of filleting them I get most of the meat but I always cut into the gut cavity by accident so hopefully I can get the skill down pat
