For this application we use TLD 20 30lb Fireline and 8-10kg rods. Terminal tackle to suit specific applications.
Allows you to catch most species that come along anything from a flathead to snapper to a 20kg plus gummy.

Sounds ok for a western port set up with the strong tides there, maybe ok for Port Phillip heads area also... welcome to the site..

Ive got a couple of big overheads gathering dust on the rack...I’m finding the 10k Saragossa’s on the Terez spin rods a lot easier and more versatile over the overheads.

For bottom bouncing offshore I love my shimano charter specials. I have saragosa 10k for chucking lures and trolling lures. And a saragosa 25k with a shimano ocea rod for chucking lures at sbt

I think this is an excellent choice for what you do - to be honest, almost anything would work for you. The reel you choose should have a good drag, but it doesn't have to be overly expensive if you hook a big snapper.
When it comes to butt length, you should get something with a bit of length to the butt if you plan on sticking it into snapper racks.
