Headed out for last nights low tide with a spear, net, head torch and low expectations. I haven’t done any lamping in a while so I made the most of the glassy calm conditions and headed out from Carrum. I was wearing waders but I was still extremely cold, and for the first hour I waded around really surprised by the lack of life, a few small toadies and a some stingrays but not much else. Generally I will encounter at least a few garfish but didn’t come across any last night. However, just as I started to daydream a flathead appeared in the light, I made very slow and subtle movements until I lined the spear up with his head before jamming it down. Shocked, surprised and freezing I tied him to my waders and continued. More time passed before I came across an even larger flathead, but somehow this one figured me out and swam off. Now a little despondent I continued for another hour, before to my surprise a flounder came swimming over, stealthy as ever I rammed the spear into it’s body. I was now completely satisfied, as I hadn’t speared a flounder in about 3 years! So I started heading back home, on my way I came across an even larger flounder that I also managed to successfully spear. It was an absolutely great session, especially with the way fishing has been for me lately.
Also, does anyone know any good flounder recipes, or at least the best way to cook them.

Dust with flour and shallow fry or deep fry it. Sprinkle salt and pepper.

Nice. I'm too soft and pathetic to go wading beaches at night at the moment -- and I'd be trying to catch flounder on plastics rather than with a pointy stick -- but well done. The Whole Fish book advocates brushing with olive oil and grilling them over coals. He dresses them with a bit of verjuice. If that sounds like your idea of a good time I'll message you a photo of the recipe -- it seems simple, aside from the firing-up-of-the-coals bit. i.e. less of a 'recipe', and more of a 'technique.'

Also, I recall roasting them whole once or twice ... it turns out okay, but maybe grilling would be better.
