Fresh Yellow Tail Kingfish is beyond doubt my favorite meal.

How do you prepare them.
I always found kings to have a oily taste.
I have been meaning to try the following suggestion but I am not convinced on the soaking the flesh in water...

Fried with the skin on and allowed to crisp up a bit, served with salt and lemon juice. The acid in the lemon juice cuts through the oily taste. Don't eat the dark meat from the bloodline obviously.

Pretty much. The less I do to them the better they taste.

Redfin definitely hits number 1 on my list, eels are second but only from clean water (not from dams)

I’ve heard boar fish is right up there but I speared a few a while back and didn’t think much of it
Cannot beat good old fashion whiting and flathead for mine.

As I grew up in Queensland I ate fresh reef fish a lot some of my favs are red emperor spangled emperor coral trout mangrove jack rock cod giant Greg’s and last but not least is sweetlip I have tried very few Victorian fish but I only like flatties in vic
