Hey ducky can you explain if there are any problem,s using the jg offset plate there review,s are great i can pick one up for $110 and whats with the water bath thank,s Dazz

No issues with them mate. They are great to use and can convert the humble weber into a great smoker. Check out Australasian bbq alliance on Facebook out. Plenty of posts in there.

Do an online order from the que club and buy some rubs while you’re at it.

Greenwood bbq treebark for lamb
Boars night out white lightning and double butter for general purpose
Loot n booty everything for general purpose

With those 3 rubs you can get everything tasting pretty awesome. From there you can go down the rabbit hole.

This a rub that i used to use in a pub i was working at a while back, we mostly used it for pulled pork tacos.

The ratio is equal quantities of each..
ground cumin, garlic powder, onion powder, chilli powder, brown sugar, smoked paprika, cayenne pepper, salt and pepper.

if you like it hot, add more chilli powder or cayenne pepper.

I also have a recipe for a BBQ sauce that i used to use, its a pretty full on recipe but it was very nice. If anyone wants it i can post it.
The only thing better than serenity is a two stroke at full throttle!

Steveo that,s pretty much one of the same rub,s i make next time i will add brown sugar it make,s sense go for it buddy put up your BBQ sauce recipe

Another rud i like is dry mustard ,sweet paprika,garlic powder,onion powder,celery salt cayenne pepper ground allspice and i allway,s forget to add brown sugar

That’s pretty much the basis for a lot of rubs you can buy. But trust me. The purchased rubs above are worth trying. Then try and emulate them if you can be bothered.

In terms of how much you use on a brisket. You might use $3 of rub on a $120 cut of meat. It’s fairly insignificant.

So this is my own personal BBQ sauce recipe i used to use a fair bit, its good as a basting sauce on rotisserie for example or mixed through pulled pork or beef or just on hamburgers. Not very good for smoked Australian Salmon tho.

The recipe if have is for about 3 litres so i have tried to cut it back to make about 1lt or so

3 tbsp Bacon dripping (eg.. the stuff left in the pan after you cook bacon)
2 Shallots or onions, fine diced
1 tbsp garlic, fine diced
1 tbsp dried mustard
1 cup brown sugar
1 cup coke
1 cup tomato sauce
1/4 cup apple cider vinegar
1/4 cup maple syrup
1/4 cup Jack Daniels or bourbon (increase if you want a stronger flavour)
2 red chillies, sliced (keep the seeds if you want more heat or dont use them if you dont want any heat)

1. M elt bacon fat
2. Add onionsand garlic. sautee until soft but dont colour
3. Add chilli and then remaining dry ingredients and mix through, deglaze with the vinegar
4. Add all the remaining ingredients and mix through
5. Simmer for about 15mins or until it is reduced to nappe consistency. If you find it is too thick just add some warm water.
6. Strain and chill, or use it straight away for basting.
The only thing better than serenity is a two stroke at full throttle!

Now , , , , I think you may have a dilemma on your hands. By the kindness of your heart you have given us those two awesome recipes for the Rub & the BBQ Sauce. Problem is , , , , you do know that VooDoo reads these posts AND he makes potions , , , , so it wouldn't be hard for him to use your recipes and make millions out of them.

Probably marketing them for BBQs, mainly Beef. To flavour "Moo" so to speak. He might even market it as "VooDoo MooDoo"


ps. Just don't tell VooDoo that Doo which means "Do" as in "Doing" but it can also mean "Doo" as in "doodoo" (poo) :-D

I'm definitely getting an offset smoking bbq.

I heard it needs to be seasoned first, true? And how? Just rub veg oil on the inside surface?
