smaller fish are Ok but are just a fish , larger snapper are crap it's that simple
and yes you can fill a snapper with herbs - or sweet and sour - curry or chilli
my thoughts if you need to flavor a fish to eat it get a better fish to eat
KGW - Flathead - Gumbos - even leather jacket come in higher on the eating list than snapper
had some scorpion cod last night a much better fish than snapper much like Gurnard
as for catching they are ok still prefur Gummies

Once a week, or twice if it's prepared differently.
Nothing goes to waste on a big Red, fillets go in the fridge/freezer typically, as the first dish is usually a snapper soup using meat from the head, wings and frame - I steam then cool them, then pick the flesh off the bones. It's amazing how much usable meat there is from these bits off a big Red. The meat goes into a tomato-based soup - tomatoes, stock, garlic, parsley, chives and (optional) some pasta shells or croutons. YUMM!!! :dinner:
Fillets - Panaeng curry snapper is irresistable. Just get the Valcom brand Thai Panaeng curry paste from Coles. Hmmm might cook this tomorrow! :cook2:
Just remember the fillets from larger Reds can dry out in cooking - hence I favor cooking methods that return moisture into the meat, eg steam, soups or casseroles/curries. Using a Slow cooker will probably work too but haven't tried.

I am with you slinga snapper great to catch but there are better fish to eat flathead and shark I tend to give most of the snapper away. Noticed how all the best receipes for snapper smother its natural taste.

As per my other post is all depends what condition the fish are in what they have been eating and the water quality.
Spent plenty of time fishing the south coast for reef fish.
Snapper caught from those areas even the larger models along with other reef fish are very good eating.

my local thai restaurant steam them, quick drop in oil or under grill to crisp the outside and then whack on some chilli sauce - tastes great. it tastes better than some of the fish they have on their own menu!

Not a massive fish eater here,
small snapper are reasonable, love hoki and coral trout, flatties are good as well, and obviously squid is the best
