Types of squid

I have had squid in a few restaurants and often it's quite thick and just al dente to bite, but flavourless. Does anyone know if this thick squid is a species, or is it preparation?

That would be some crap from overseas sold in bulk in Australia .
I find calamari squid soft tasteless but I absolutely love arrowhead squid here from offshore Lakes Entrance .
fish as in meat is the same the tougher something is the more Flavor you get and I love chewing on a piece of arrowhead Squid the flavor is endless wouldn't give you a 10 cents a kilo for calamari but I'll give you a 20 bucks a kilo for arrowhead
