A flatty head or fillet from a fish that was swimming minutes earlier, has a very "fresh" appeal. It is not the best bait in the world, but too good to ignore if fresh.

Wow, I never knew that about Snapper and Flatties, nice to know. Here in SA, we get more Flatties as a bicatch when fishing for whiting.

Red, that "fresh" is on the money. We bait collect while fishing for Snaps in Summer (a post I shall put on yours croe, soon) and catch Slimmies. Not for the freezer as they thaw to mush, but off one hook, into cutlets and onto the Snapper hook. "Bam", better than any "fresh" stuff from the freezer, and we do keep our Squid, Tommies and other Snapper bait quite well, but fresh Slimmies Cutlets work a treat. AND they have staying power on the hook.

On a side note. Flathead heads are gun baits for Blue Swimmer Crabs here in SA
