Next one I catch I plan on trying to sever the spine with a cut from under the jaw/gills to try and hit the heart at the same time.

This is how I do it. Im not sure that its the best method, but haven't had any issues and always tastes good. Have done a lot of gummy's (for me anyway) this way, so dont see a need to change. Happy to hear better ways though.
