Yeah they can get huge I caught one that was about 1.5m head to tail and about half a meter wide

Most of the "lower quality" sharks are not processed in the commercial industry as they have high shrinkage when cooked. If you get a piece of flake at a fish and chip shop and the meat rattles around inside the batter, then you know they are using low quality shark not gummy.
In my opinion stick to eating, gummy, swordshark, mako, Bronzies, eagle rays, large skate. The rest are rubbish. Even deep water dog shark shrink like hell.

I have cooked one before and I can tell you it's definitely not worth killing the fish

Just curious how do you clean them? Just take off the tail and skin it? Ive caught some monsters before but never tried eating any. Tempted to try now

There's a lot more better/easier to clean fish to eat, i personally wouldn't bother..

I cleaned one once to try out, I tried skinning it with out much luck, I ended up boiling a big pot of water and dropping the bits of fish in there for about two or three minutes each, the skin virtually fell off ! trouble was the flesh was half cooked by then so it only needed 1 to 2 minutes in the fry pan to finish it off. Definitely won't be cooking another one ! just release them they keep the sea floor clean, fish vacs ..
