I've made up what we call bait boards - (they are at my mates place, so I can't get pics)
Made out of pine, they are custom made to fit the width of the tinnie's seat - and have a slot on the side to slide knives and pliers into, along with a little tray on top to hold sinkers or other tackle, and there's a foam panel on the side to hold spare hooks for when you need them, rather than fidgeting through your tackle box. There's also a ring on the side to hold rags etc. Also wide enough if you need to cut up some bait as well. The latest addition is a ruler along it to measure the catch. If I can get a pic, I'll post it up here.

Yep - very tight for space in the boat.
I can't believe how long they've lasted - well over 15 years since I made them and no running repairs needed in the meantime

Something that catches everyones attention at my local pier is my..
4M telescopic fishing, this bad boy is made of lightweight carbon with a custom full marine stainless screw in 8mm net head.
I run a fine mesh on this so I can easily scoop up the calamari, and even garfish when they're on the surface.
Made a few modifications of double stainless bolting this net and renforcing it with a stainless rod. Gave the whole thing a coat in marine anti-rust epoxy.

I always found the motion sensing bite alarms to be a handy little gadget to have for night fishing.
Just clip them onto the rod and watch for the flashing light to change color.

These for grabbing yakkas, pike and other scaly fish that are annoying to handle

Yeah I thought they were just a wank at first but they’re easier to control fish with than lip grips

Proper one handed access to pliers, knife, scissors and a few other bits and pieces. Mainly bought for the pliers component. Takes a few goes to get used to it but is a true single handed tool that leaves the other one free to hold fish/rod/net/etc
