Great thread - as this will be my first winter kayak fishing (hopefully... p*ss off COVID) I have purchased some Shark Skin socks cheap, and also got some waterproof pants (with socks) and I think i'll try some dive boots or crocs over the top. Interested to see what everyone else does.

I splurged on these https://hws.com.au/product/lovig-dry-pants/ and have some kayak thermals I got cheap to go under them... fingers crossed
