The outback is a great yak for the fishing on offer around melbourne. Both locations will suit. Just depends where you want to drive to.
Sorrento has been fishing well for squid. And plenty if yakka around flinders. Take your pick..

Yeah I ended up with some squid and a big cuttlefish as well in the morning.
Was really blowing , once the southerly change came through , it must have been more pleasant.

I fish off Mornington quite a lot too. Last few weeks seem to have slowed down a bit but I still got a few 30-40cm today. There's an app called Boating HD by Navionics with depth charts, use that to find the drop offs and you'll find the pinkies. I think I have the same fish finder as you (Hook2 4x?...

For snapper, maybe mt martha. Start early morning with the high tide.
Rye for squid and whiting, they can bite anytime.
Check the wind and tide. Mt martha can get a bit rough.
I think rye has less tidal movement, but can be crowded being its still school holiday.
