I just use the ones with 6 small hooks on it, and its illegal to bait sabikis, unless they only have 2 hooks on them. You dont need too anyway. You have the added bonus that you might catch some fresh bait also

Snapper snatchers with 5/0 hooks are awesome for flatties. If your going s/p, squidgy fish, the ones with the purple back and grey belly are absolute winners for me..I live down the bottom end of the bay, so its generally 1/2 ounce jigheads and heavier.

I'm a fan of the Atomic range of plastics, the Prong in particular.
The 'old penny' or ghost pearl colours are my favourites.
They have a nice action and fish go nuts over the scent.
Any size is fine, because as others have said, flatties will nail pretty much everything if you put it in front of them.
I've heard that the best technique with the Prongs for flatties is the 'slow draw', so you can get a bit more movement into the tail and legs.

Pink, Pink and more Pink also white seem to be really good also on a 1\8 jighead

On a different serious note though, flatties will take just about anything shiny, tin foil wrapped around a hook a few times works well, like a big silver grub shape. Way cheaper that using your plastics if your just chasing flatties , or use an old silver or gold wonder wobbler. There is really no need to over complicate things. Flatties are not fussy, the hardest part will be finding them.
