Generally speaking land based fishos, might use any surface against which they can cut up their bait. It can be sand, the top of an esky, the pier, wood or concrete, even the rocks.
However most of these surfaces will eventually blunt the blade of your knife. The use of a small plastic bait board always gives a firm surface that will not blunt the blade of your fishing knife.
This bait board, meaures about 17 cm by 23 cm. and has a handy handle.
