Dont ever turn your back on the surf

Pre tie your rigs

Dont fish in high swell or winds

Wear a pfd, especially if you arent a strong swimmer

As for the fishing, good luck, I have never fished there but would love to ^_^

Oh, and always be mindful of the tides, make sure you know when low tide is especially. You dont want to be swimming back to your car

Im pretty sure there was an Ifish episode about rock fishing at Jervis Bay, catching either luderick or black drummer (can't really remember) and kingies at some point, both off the rocks. You might be able to find the episodes or at least some info about them on the internet.
