The bigger fish are supposed to be excellent. I've heard them rated better than gummy by some. The smaller ones are called soapies for the taste or texture. Yes, they are delicious. I ate the first one I ever caught (still my pb at 90cm ... just!) and it was very tasty. They make a good cutlet, too. I really like to eat the fish I catch, but have been releasing all our Melbourne mulloway over the last few years - I wish there was better data on how much contamination they might have, but without scientific comparison to bay fish, I just don't know at this point.
