Don't rule out motor height as it can have a considerable effect.

On out big boat 650F the different was night and day between a motor that was too deep and being raised to the correct height.

PS when you are 2 up where does the other person sit.

The second person sits at the front just in front of the bow. I shuffle my way a little forward too to keep majority of weight forward. Will toy with trim and take it from there I think. Trial and error works best I guess
