Its the language marine units speak so they can talk to each other ie lowrance to garmin

NMEA stands for National Marine Electronics Association.
In a nutshell its basically a standard of code thats been introduced/founded for all marine elctronics makers to follow, something like the ASNZ standards for building, manufacturing etc. or in an easier terms Windows for your PC, so that all brands like IBM, Dell and other manufacturers can make machines compatible to run windows. or like android operating software for mobile phones.

what does it do in boats

using this connection and compatible units. you can get your sounder to connect to the newer marine outboards and have a digital readout on the sounder for almost every function your engine does, speed, fuel usage, oil levels, hours done, service reminders, ignition timing, etc etc etc.....
you can get your compatible sounder to connect and operate your trolling motor, and also interconnect additional sounders on the same boat, so they are a network.
you can also connect your sounder to a compatible radio and control everything from the sounder .
theres lots more it can do , but these are some common ones.
