I have not done a lot of Salmon fishing but from what I have heard they are no good for eating, although I can not back this up as I have never tasted one. All I have ever done with them is used them for gummy bait.

Smoke 'em if you've got 'em

In NZ we call them Kahawai, salmon seems too nice a name for them

Definitely smoke them, I bleed and smoke the smaller ones and turn the big ones in to burley blocks..

Best smoked with Brown sugar rubbed on the flesh. I do this constantly when I get salmon, or straight in the oven with coconut cream and onions.

Yeah, I have said before, they are a fish that must be looked after properly.
Small ones, 1.5kg, bleed immediately and placed in a saltwater/ice slurry, there is nothing wrong with them.
I have seen it so many times, people catch salmon, leave them lying around for hours, and then say they taste like $hit.
Having said that, we are all different.

Cheers.....ThomasG

I agree with you mate. I have seen too many people catch them and leave them without bleeding them for quite some time and then later saying the quality of the flesh is bad. Like you said, if they are looked after and prepared properly and eaten fresh, they aren't too bad at all.
