Great job!
Bit of a novice question here....do you wack their heads off as soon as you land them? (to reduce ammonia?)

On a the water you cant, as you have to land them whole. You can only gut and bleed. Do this immediately.

Whether to cut head off off or not when on land depends on how you skin them. I gut, bleed, remove fins, skin, then cut head and tail off. Cut spine out and slice into fillets. Leave head on while skinning to get something to pull on (again depends on how you skin them). Rinse with plenty of salt water

Always skin and remove head and tail , with a good rinse at least before taking home. Getting skin of ASAP is probably most important re ammonia. Freeze for a week or two before use alos helps if you can

That's not quite correct, you are allowed to head gut and gill a shark on the water.

As long as it can still be measured from the rear most gill slit, to the base of the tail, it's fine. You're not allowed to fillet them before landing though.

Quote taken directly from the fishing regs.
Carcass (sharks including elephant fish): The body of a shark or elephant fish which is not cut or mutilated in any manner other than to remove the gut and head forward and clear of the rear-most gill slit.
