I cut them and bleed them while I'm on the water, never had a problem catching while their blood drains into the bay between my Mirage Drive Pedals :thumbsup: (Some people say the blood scares them off etc but I've never experienced that) the current draws the blood away also.
Once drained before heading in I gut them and put them in the esky till I get home and fillet them.

If you can be bothered at the time, removing all fins but the tail can be done. Provided fisheries can identify it's a gummy (easily done just by skin colour) and measure the carcass (hence keep the tail fin) you can't be done. And it's less waste to get rid of at home or wherever
