Fresh tuna recipe

Cooked this up last night, tasted great and the regular cook loved it!

Southern Bluefin Tuna and roast vege pasta

Ingredients
1 Tin tomatoes
Mixed herbs or fresh oregano, basil, parsley
Balsamic vinegar
Olive oil
Garlic 2 cloves
1 medium onion
Carrot eggplant pumpkin capsicum mushroom for roasting
Penne pasta
Salt and pepper to taste

Marinade tuna steaks in 2tbsp olive oil, 2tbsp balsamic vinegar and 1 clove crushed garlic for 2-4 hours

Dice veges to about 2.5cm squares, add pinch of salt and drizzle of oil and roast in hot oven 220 degrees for about 30mins or until just cooked

Simmer tomatoes, onion, mixed herbs and 1 clove garlic for 20mins, put in food processor or mush it up well for pasta sauce, salt and pepper to taste

Simmer 2tbsp balsamic, 1tbsp olive oil until reduced by about 1/2 volume and set aside

Hot grill tuna steaks on griddle pan, until cooked to your liking and remove from heat immediately

Combine roast veges, pasta and pasta sauce and toss to combine

Serve with drizzle of balsamic reduction, and garlic bread in the side

Plenty of scope with this recipe to adapt to your taste especially the pasta sauce and veges.

Would post photos but was too busy hooking in with knife and fork :dinner:

Gee thats a great recipe. Might try it with a bit of Albicore too. Yum
Whats better than a days fishing?....two days fishing!
