How to prepare Eel's for eating.
I'm going Eel fishing in Olinda Creek, Lilydale, my question's are;
a. Do I need to bleed Eel's;
b. How to prepare for cooking :cook2: ; and
c. Best way to cook them :dinner: .
I have eaten Eel before from Restaurants, but never attempted to cook them at home.
Any suggestions would be most welcome.

To be honest I have never tried eel, but I do understand that smoking them is popular. That is putting them into a fish smoker/

i do believe boiling them gets out a lot of the oil out.a mate of mines old man used to pickle them and they wern't too bad.

Fist thing is to remove the skin, this will require a set of pliers to grip the skin and a pinning the eels up as its best to rmove the skin from the tail to the head. This takes off a lot of the fat that is attached to the skin.
You can then cook them in a variety of ways , grill, bake or broil. They have a strong flavour and will benefit from bleeding first.
For my taste I prefer the larger NSW variety than the ones we have here in Vic as the are bigger and carry more meat on them.

Smoke 'em hot. Hanging in the chimney. Bigger ones slice the tail so the fat drains out.

Take them to a chinese resteraunt and let them cook em up LOL, lets see, best way to cook eel...
Cut them up, use them for Gummy bait and cook that instead Ha Ha Ha!

My Father used to soak them in milk for an hour then pan fry them coated in flour, skun them first. Tasted great!
The soaking in milk took any bitter or strong flavour out of the flesh.
