Coral trout is easily one off the finest eating fish.

When you catch it fresh just fillet it straight away....reach over the boat and grab some salt water and poach it in a pan

I ran out off food one trip and lived on it for a weak...just fantastic tucker

Heard many many times coral trout is a beautiful eating fish.
Yet to try it though :)

Here are a few dishes that I made: Rainbow trout, sashimi : snapper (Japanese).
