This is beer battered flattie tails and snapper done on the BBQ just with butter, salt and lemons. Delicious! :a_goodjob:

Here's a few shots taken awhile back. First pic is the two heads used for the fish head curry

And the second is the classic beer battered flake with home made chips.

And the third is grilled (whole/headless) snapper with Malaysian fish head curry along with vegetable soup and grilled prawns.

That looks sensational mate. I heard from the head of the fish you can get some really nice flavours :thumbsup:

Yes in deed you are correct Lightning. Everything taste better when cooked on the bone. The bones gives out a sweet flavour and keeps things moist. You'd be very surprised how much meat is in a snapper head, even pinkies from 35cm.
I hardly fillet fish except the odd flatty tail here and there. So after fishing, when it comes to cleaning time, a quick scaling and gutted, done! I sometimes feel saddened when i see snapper frames with massive heads thrown into the water after people have filleted their catches.

At least you use most of the fish unlike most. Couple of years ago when I went on a tuna charter out from Portland was surprised at the cleaning table how only the fillets were knocked off. Behind the head there was so much flesh. But locals were there waiting for the left overs.
