Eel Recipes

Does anyone have any recipes for cooking eels?
I generally smoke them in my homemade smoker and they are fantastic!
I was just curious to see what other options i have as far as cooking them goes.

Fillet them and grill, Japanese unagi style. Yum.

You just put them in the grill and coat with sauce every few minutes with a brush. Turn them over, coat with sauce. Do this about 3 times each side, until cooked. Cooking time varies, depends on how big your eel is.

The sauce is a mixture of rice wine, soy sauce, sugar (or malt, the stuff that kind of looks like honey). Approx 1:1 wine to soy sauce ratio, and about 2:1 wine to sugar ratio.

My question is which Eels are good eating and would you eat them out of the Yarra if it was from Bulleen or further away from the city? I have caught many Eels but never cooked or eaten any of them.

I catch mine in the yarra around Eltham/Warrandyte, tastes fine. No muddy taste at all when you cook it unagi style.

Best eels ive ever had are from sugarloaf, after gutting them and skinning them i cut them into 5cm bits roll them in flower with salt and pepper then shallow fry it. Good breakfast with field mushrooms and fried tomatos. As a kid mum would do jelly eel but i was never a fan of it.

cut them up in 2-3cm thick slices and lay them on a tray slice up 2 onions and sprinkle over and dice up some tomatoe and drizzle cream over and straight in the oven for a good bake. Serve with bread or boiled potatoes. Delish!
