well it was ok, i wasn't a huge fan of it. it tasted a little fishy not muddy at all, it was a bit fatty in parts but we just picked around that. the texture was good, nice firm white flesh but it just seemed pretty average all around. mum and dad enjoyed it but they eat freshwater fish a bit more than me, i prefer saltwater fish. I'd be keen to try it again though but filleted and either battered or crumbed and pan fried.

Yes they do nude up..the yellowbelly from eldion have alot of fat...the bigger the fish generally alot more fat.

To be honest the big ones (anything over 4 or 5 pd) are quite often 50 percent fat..I would pretty much prefer a light beer.

We had some of the Yellowbelly we caught at Bonnie Doon last week and had a similar thing with the fat. I ended up trimming the fat off the fillets and we put Vegeta on them. If you want to really enhance the taste of fish then put Vegeta on them it's fantastic.

Cooked 2 yellas up sat night. Plain flour with enough Hungarian sweet paprika to make it a pink color, coat the fillets with the dry mix and fry in pan, they were exxxxellent.
