It won't make any difference if the fillet is bigger than the minimum legal size some of the fisheries inspectors are straight out of the rule book no common sense used.

I personally just gut the fish while I'm still out, clean and bag them into the esky.
I don't bother descaling as I usually fillet my snapper, flatty etc so the scales go with the skin.
But I like the freezer idea :thumbsup: gotta do that in future if there's space instead of double/triple bagging and could still get a spike through the bag.

I prefer cleaning the catch in saltwater so do it on the boat.

The fish or two I keep for the day I like them on ice asap....esp if its a hot day

Cleaning your saltwater fish in saltwater is a must don't let fresh water touch them it spoils the tadte I reckon

Short of soaking the flesh in water I don't believe there is any correlation between freshwater and spoiling fish. Osmosis will not take effect if a fillet is rinsed in freshwater and patted dry.

Leave it in a dish of freshwater overnight and it will be a different story however.

I just make up a bowl of brine to rinse them in if I'm cleaning them at home.

I agree with this strongly. Imo the fish taste much better when cleaned in saltwater. It's a pain at the end of a fishing session but if you do it it's worth it.
