Very Nice Indeednmgar wrote:I wasn't really happy with my Marttiini filleting knives (too flexible for my taste) so I've just bought myself a Deba.
I have a marked weakness for Japanese knives and it will complement my Yanagiba very nicely

Thanks, now if only I had a fish to try it out.
I think I'm off to the market today to buy a whole fish and a few green prawns.
Along with the knife I also bought a konro and so bbq prawns and vegies are the planned menu for tonight.

They are hardly ever in stock unfortunately; I put my name on their waitlist late Nov and received an email last Tuesday that they had arrived in Sydney that day.
Happily I ordered and paid last Tuesday as they were out of stock of the larger 2 by Wednesday afternoon, the small one lasted through until Friday.
If I win Ozlotto tonight I will certainly be heading down to Richmond to have a look at their Rare Artisan knives; their bespoke Nakiri looks so good and I don't have a vegetable knife at the moment.
Need to win Lotto, their most expensive Knife costs $3,885.95, nothing cheap from these guys.
Cheers,
Neil

Love the Jap knives, wouldnt mind a Nakiri love the shape but I prefer a bigger blade. The Nakiris are usually 165mm and top out at 180mm. The bespoke ones u talk about look cool but would prefer traditional Jap handles on them.
Here are my Ceremonial Japanese Turnip Slicers.
