It's a very underrated fish. If you get a big one (1.5kg and up) try cutting the fillet in half length ways - this makes them easier to cook, and also better texture and flavour in my opinion. I love fresh Australian salmon.

The only way I can eat Salmon is if it's marinated in vinigar and lemon for an hour or so before cooking otherwise they taste like crap
