Would love to know where you got some space, I went out off willy and it was absolutely packed. Boat after boat after boat. Any areas a bit quieter atm? wouldn't mind getting away from the crowds.
Eventually found some fish out in 12 away from the boats. Caught about 20 but all small (undersize - 30cm)

If you want to experiment with a fillet or two I saw a recipe for snapper fillets on “ADOS addicted to fishing” that I enjoyed. I also liked it with flathead fillets.

Natural Greek yoghurt
Chips
Make a mix of 1 part mayo to 2 parts natural Greek yoghurt
Lay fillets on baking paper on a baking tray
Pre heat oven to 180
Paste mayo yoghurt mix over fillet
Crush up good chips (I find red rock deli or kettle best) any flavour will do but I like salt n vinegar
Pack chips on top of paste
Put fillets in the oven for 12 mins (or until cooked)
Again, nice catch
