Cooking fish on a public bbq seems like a **** thing to do unless it's well wrapped in foil.

Yes I going to wrap in foil. With lemon, rosemary, some spices and butter on the fish.

I was going to say, i would be just as worried about the BBQ as i would be the fish. ;-)

People often seem to keep mulloway caught from the Yarra and Docklands - not sure why, as previous EPA studies have shown this species to be relatively contaminated compared with smaller fish like mullet. Snapper, on the other hand, are mostly a bay fish that come up the river with the tide at certain times of year. It's hard to see why they would have accumulated much in the way of contaminants ... unless the bay itself is more contaminated that most of us believe. It would be interesting to see some actual studies of fish from the northern half of PPB.

Or for something different you could try packing the cavity full of dill and just olive oil and sea salt on the skin.

Try the old Malcolm Douglas recipe, coconut cream n tinned mango, with any or all of the above mentioned Asian flavours, don't forget lime zest, or kaffir lime leaves. Delicious.
