Great eating fish but i like to catch and release them because of how slow growing they are.

i think the taste of the fish and whether or not they will be good to eat or not depends on where they are caught.if your catching them in a place that is known to be polluted then they will probably not be very good for eating as they tend to stay in one area for long periods of time. so they become polluted with the same toxins that are in the water. if you catch them in good clean water then they are great to eat. as far as not keeping them due to slow growth rate, i think as long as people stick to the legal catch limits then there are no worries.

I c&r them, unless my missus wants a feed , she likes them.

There sure is a big difference in taste with them though depending on where they are caught / as mentioned.
The ones from Gippsland taste totally different to the ones around the city, although I'm not keen on eating either.
My missus will only eat the Gippsland ones.

They are a good fun abundant fish to catch though.

the river bream can have the muddy taste. That is why I don't keep those that are too dark. Those silvery fish from the bay are OK for me. No yuck factor unlike the ones from the river system.

I like the taste of bream.
Mostly I'd keep one if I want to eat it. Generally any legal size that'll fit in my pan. Too big is also pointless.

Having said that, I'd generally not eat bream from Docklands (easy, since I've never caught bream there, nor fished there)
Mostly Patto (though they tend to be small these days if land-based) or Brighton.

Ive been fishing for bream for the last 25+ years and have only in the last 10 or so years been releasing almost all of my bream.
If i keep any i keep one or two for dinner that night, i dont freeze any fish.
MY WIFE LETS ME BUYS ALL THE FISHING GEAR I CAN HIDE !!
