Ok I have always bled a gummy with a cut at the back of the head, only because I see everyone else do it that way, not because I have researched it to find the fishes main artery, so why isn't the cut mad across the throat from the left gills to the right gills ? don't both areas bleed equally as well ?
Do we have a fish surgeon on the forum ?

I cut the throat on nice size gummies because it looks better for photos. For table size gummies I just cut the head because it's easier to hit the main artery

I used to own a shark boat off SA. We never cut the head but used to cut the throat in opposite way you would normally (down the fish instead of horizontally across, then cut off the dorsal fin at the base and cut a 45' angle off the top of the tail. Making sure all blood is out of them before packing away or freezing will leave you with a healthy fish.

I cut the head off and gut them straight away. Remove tail and fins then put the trunk on ice.

Cut the neck, that’s it. Cut the head and you ruin a photo + it looks a bit ....

Then it doesn't matter were you cut it.

Better to bleed, gut, and turn into a trunk whilst on the water.

agreed.

I generally do them the same as we used to on the boat, head gill and gut. They still present reasonably well for photo's this way also, if you must.

Seems less humane letting it suffocate while posing for photos rather than bleed out for a quick death?

Dunno, that's how I feel anyway.
