Re: Which fillet knife do you use?
Lots of decent cheap knives around. The low-priced Jarvis-Walker ones in KMart and Big-W are fine.
As long as you keep the edge keen, you'll be fine.
Cheers,
Mike.

My victorinox 6 inch semi flex is the goto knife for most of the time. Great blade that is easy to sharpen and stays sharp. Also have swibo and marttini in different sizes. Good knives definitely have better steel in them and stay sharper for longer. Get what you pay for. Good brands are not that expensive though because you can get say an FDick for about $30 from most kitchen shops. From memory i think my victorinox only cost $35. Don't skimp on cheap crap and think of what you have spent catching your fish. That fish deserves a good sharp knife . :fish11:

Victorinox is my best knife for reef fish but rust easily.
For large numbers of flathead I like the shimano with big rubber handle. Blade flex is just right and great grip in the slim.
