I just use cheap ones. Just make sure they are sharp.
Though I don't often fillet a lot of fish, mainly only ever do gummies, maybe the odd whiting and flathead occasionally.

I pinched my wifes scanpan knife it's the best filleting knife I've ever had :thumbsup:

I bought a heap of $3 filleting knices off ebay 7 years ago so doesnt matter if they break or go overboard lol

I just use the cheap ones as well just sharpen them from time to time. Does the job for me.

I mainly use 2-3 knifes. Got a 8 inch mora for filleting. Razor sharp love that knife. Got a 5 inch martini very flexible for boning out. Than have a 8 inch heavy dexter almost a boning knife for bashing through heavy bones etc. Than just use cheap jarvis walker knifes for fining gummies etc also double as bait knifes that way good knifes stay good. A good quality knife should last you a bloody long time!
