I'd say +40cm is a snapper that's what the fishing guide says

I am of the same opinion as most. Under 40cm is a pinky, over 40cm is a snapper. Yeah, once you get to 80cm territory it's a big red. What's a horse, 90cm+.

I think somewhere around 48-50cm. They lose the really juvenile look and start to take on the more adult snapper looks.

I've always gone by this too from the DEPI site:
Common Name/s: Snapper
Scientific Name: Pagrus auratus
Minimum legal size: 28cm
Bag/possession limit: 10 (of which no more than 3 fish may be equal to or exceed 40cm in length). Retained whole or in carcass form
