Hey!
So I've got all the belly flaps from the barrel I caught a month ago.. what smoker do you guys suggest? I want to buy one and smoke the belly flaps. There are so many out there and I got no idea at all about what's good. Electric? Gas? What do you guys have ???
Thanks

so you are looking for a smoker...
I am not a smoker but I know someone who does. Do you want to meet him?

Re: Looking for a smoker- recommendations?
I use a basic s/steel smoker, get them at any of the camping/fishing stores. it has a couple of racks & runs on metho. works well with a couple of salmon fillets on each rack. I use a foil pouch with wood chips, punch a couple of holes in the foil & sit on the bottom tray, method burner under the tray and smoke away. might be a bit small if you have some belly flaps.
How many kgs do you want to smoke, either the large one below or the anaconda would get you going. The others below might be too small.
good size for larger volumes Catch of the Day
Good size for longer fillets Anaconda
Might be challenging if you have lots to smoke Aussie Disposals
might be too small. BCF

Thanks bud exactly what I'm after. I have at least 30kg worth of flaps sitting in the freezer with the skin on.ratbag wrote:I use a basic s/steel smoker, get them at any of the camping/fishing stores. it has a couple of racks & runs on metho. works well with a couple of salmon fillets on each rack. Re: Looking for a smoker- recommendations?
 have a look around for the one on Catch of the Day, there is a huge price difference in where you buy it. Also have a look into the process to make the brine solution and coat in brown sugar. There are heaps of options on the wood/flavour smoke too, try a couple in small amounts. I find the smoked fish always tastes better 24 hours after.
