I prefer my fish just cooked no fancy sauces that detract from the fish I like to taste the fish

it does depend on the fish of cause but better eating like KGW - Flatties - smaller Snapper under 40 cm - gummies etc just fillet them down and shallow fried in bread crumbs is hard to beatToady king wrote:What's your favourite way to cook your fish?
fresh whiting is quite good just smothered in Lemon or lime juice ( or a mix of each ) and put in the fridge for an hour or so - goes mint with a salad
Tuna hard to beat some of the shoulder fillet thinly sliced and dipped in some soy and balsamic vinegar and other tasty dipping sauce

tried this with some should fillet and it is really worth doing --
and then my favoured way for Aussie Salmon - yakkas - cowenyoung and silver trevs when not using them for bait is pickled they make a good snake on dry bickies with some cheese and a beer --- viewtopic.php?f=32&t=5383
most poor quality tasting fish go back or the next doors cat get some

I cooked a whole pinkie the other night. Stuffed the body and deep body cuts with spring onions, ginger, garlic, kaffir lime, splash of soy and fish sauce. Wrap and make a pouch with baking paper. I use a stapler. Put in a pre-heated oven for 20min or so. Serve with steamed coconut rice...awesome!
