I like a lot of fish, but here are some of the ways I like them; (mostly just standard with a few oddities in there)

Flathead
- Battered
- Floured and pan fried
- fennel and dill pie

KGW
- Battered
- pan fried

Snapper
- Small ones whole with crispy skin
- thai green curry
- Crispy skin fillets
- ceviche with salsa

Squid
- stuffed with tomato anchovy sauce
- deep fried / pan fried

Yakka
- Sashimi

Tuna
- Sashimi
- Asparagus salad
- Pickled

Aus Salmon
- Smoked
- Fish cakes

Octopus
- Pickled

Trevally
- Sashimi
- Fish cakes

Garfish
- Filleted, rolled and cooked with a tomato sauce

Squid, fresh, raw.

Preferably still alive.

Mangrove jack and coral trout interstate

Gummy:

Frozen for 24 hrs after caught then defrosted. (Helps release amonia and gives what I feel to be a firmer, juicier texture)

Rinse, pat dry and dust with flour. Cook in butter / olive oil mix. Add capers and a squeeze of lemon. Amazing. Best eating fish in my opinion.

Squid:

Cut tube lengthways and then score the flat with a sharp knife in a diamond pattern. Tenderize in milk for 12 - 24 hours. Straight out of the milk into plain flour with a heavy salt and pepper seasoning. Add some cayenne pepper if you want a kick. Shallow fry in small batches for a few mins till golden brown in peanut oil. Serve with salad.

Kingfish:

Sashimi style, raw thin slices with a bit of soy sauce, lemon and wasabi. Caught that day, nothing will beat it I recon.

Or alternatively, in sushi rolls with avacado or cucumber.
