Gummy:
Frozen for 24 hrs after caught then defrosted. (Helps release amonia and gives what I feel to be a firmer, juicier texture)
Rinse, pat dry and dust with flour. Cook in butter / olive oil mix. Add capers and a squeeze of lemon. Amazing. Best eating fish in my opinion.
Squid:
Cut tube lengthways and then score the flat with a sharp knife in a diamond pattern. Tenderize in milk for 12 - 24 hours. Straight out of the milk into plain flour with a heavy salt and pepper seasoning. Add some cayenne pepper if you want a kick. Shallow fry in small batches for a few mins till golden brown in peanut oil. Serve with salad.

Kingfish:
Sashimi style, raw thin slices with a bit of soy sauce, lemon and wasabi. Caught that day, nothing will beat it I recon.
Or alternatively, in sushi rolls with avacado or cucumber.
