The plastic is perfect, I would suggest to use a weedless jighead or a weedless hook with sinker, so you can easily cast in the snags.

The problem with this is, its only going to last 1.5-2 hrs max. Unless you are charging it whilst recording somehow. Definitely doable, check youtube you will see people catching them on prawn style sps. I wouldnt know where to start in terms of location.
