Hey Guys,
I finally got a smoker to smoke my Southern Blue Fin Tuna belly flaps. Does anyone have a recipe? I am not too sure what to put in it. The fish has been in the freezer cryo sealed for 2 months now. Much appreciated

I use a basic s/steel smoker, get them at any of the camping/fishing stores. it has a couple of racks & runs on metho. works well with a couple of salmon fillets on each rack. So I've got all the belly flaps from the barrel I caught a month ago.. what smoker do you guys suggest? I want to buy one and smoke the belly flaps. There are so many out there and I got no idea at all about what's good. Electric? Gas? What do you guys have ???
