It sounds like the fish was a kingfish, or a large snapper or salmon. the kingfish will always head to a structure to snap the line off. Cameron, most if not all fishos use lead weights mate and I dont think theres biodegradable line out there on the market, at least i havent seen any and id probably be using it if there was some, ive lost a lot of line fishing over the years as I love going to very remote rocky outcrops and drop off...
